Maple Bacon Breakfast and Sun-Dried Tomato Wraps

Yield: 4 servings

INGREDIENTS:

  • 4 Wraps
  • 2 tbsp olive oil
  • 400g/14oz gammon cut into ½ cm/1/4inch strips (including fat)
  • 4 tbsp maple syrup
  • 2 tsp cracked black pepper
  • 150g/6oz marinated Sundried tomatoes, finely sliced
  • 6 tbsp mayonnaise
  • 1 Little Gem lettuce, finely sliced

PREPARATION DIRECTIONS:

    Lay out the wraps on a flat surface.
  2. 2.
    Heat the oil in a frying pan, add the gammon and cook for 12-14 minutes, until all the milky liquid has evaporated and the gammon is starting to colour. Add the maple syrup, black pepper and tomatoes, then cook for a further 2 minutes, so they take on a little more colour.
  3. 3.
    Meanwhile mix the mayonnaise with the lettuce, then tip over the hot gammon and mix well, but carefully. Share the mixture between the 4 wraps and roll up tightly in the normal way. Cut on the diagonal and serve either hot or cold.
